This is my favorite dinner bread recipe to serve up on a charcuterie board. It’s a white bread loaf with a delicate crust, flecked with rosemary leaves and exploding with flavor. It’s just as tasty slathered in butter, and dipped in olive oil and balsamic vinegar as it is with a slice of prosciutto and some cheese.

I like my bread to be big on flavor, and this is no exception. This is very herby and garlicky, and has its fair share of salt. If you are looking for a dinner bread that’s a bit more mild, you can easily reduce the amounts of these ingredients.

As far as bread recipes go, this one is pretty easy. Like all breads, it does require a bit of planning to account for risings, so I would start it at least a couple of hours before you plan to serve.

Serve this up with a hunk of butter, hearty stew, juicy roasted chicken, dinner salad or whatever your heart desires. My pairing of choice: Wine and cheese!

Ingredients:

  • Water
  • Flour (ideally bread flour)
  • Fresh rosemary
  • Quick-rising dry yeast
  • Garlic powder
  • Sugar
  • Garlic
  • Olive oil
  • Salt

Supplies:

  • Aluminum foil
  • Plastic wrap
  • Baking stone or pan
  • Mixing bowl or stand mixer

Substitutions

Rosemary can be swapped for an herb of your choice. Some of my favorites for bread-baking include thyme, dried basil or a sprinkling of fennel seeds.

This recipe calls for fresh herbs, but you can use dried — just be sure to reduce the amount. A good rule of thumb: One tablespoon of fresh herbs = one teaspoon of dried herbs.

To give this bread more of a Mediterranean vibe, consider adding some chopped sun-dried tomatoes or olives.

Bread Recipe Instructions

While you’re preheating the oven, you can ready the garlic cloves to be roasted in the oven. You’ll roast the garlic in these cute little foil packets with a bit of olive oil and a sprinkle of salt to enhance the flavor.

When the garlic packets are ready to go, start pulling together the bread. First you’ll combine the yeast, sugar and water, then let the ingredients sit for five minutes as the yeast starts to wake up and get frothy. Next, toss in olive oil, rosemary, garlic powder and salt.

If all goes well, you should be finished roasting the garlic with some time to spare before the bread’s first 30-minute rising is done. Roughly chop the garlic cloves, then knead the garlic into the dough on a floured surface.

Let the bread rise for another 30 minutes before forming into a loaf and baking for about 35 minutes.

Easy Dinner Bread: Roasted Garlic + Rosemary

Equipment

  • Tinfoil

  • plastic wrap

Ingredients

  • 1 ¼ c. warm water microwaved about a minute
  • 3-3 ½ c. flour ideally bread flour, which has a higher protein content that makes it preferable for bread-baking
  • 1-2 tbsp. Fresh rosemary chopped, amount depending on your taste preferences
  • 2 ¼ tbsp. Quick-rising dry yeast
  • 1 tbsp. sugar
  • 10-15 cloves garlic, peeled depending on size and your taste preferences
  • 1/2 tbsp. Garlic powder
  • 3 tbsp. Olive oil
  • 1 tbsp. salt

Instructions

  • Preheat oven to 400°F.

  • Take a piece of tinfoil, and place garlic cloves, a tablespoon of olive oil and a pinch of salt inside. Form foil into ball and roast for 30 minutes.

  • Add yeast and sugar to mixing bowl, then add warm water. Let sit for five minutes until mixture foams, then add 2 tbsp. olive oil, rosemary, garlic powder and salt.

    TIP: Try microwaving the water for about a minute for the right temperature. You want it warmer than lukewarm, but not so hot that it's uncomfortable to touch. Very hot water will kill the yeast. You'll be able to tell if it's no good after five minutes, and if the mixture has not become frothy and the yeast has sunk to the bottom.

  • Mix in three cups of flour, one cup at a time. Either mix thoroughly by hand or use stand mixer with dough hook attachment, adding 1 tbsp. of flour at a time if dough is not coming together and sticking to the sides of the bowl.

  • Oil another bowl. Flour your hands, form dough into a ball, then place into bowl. Cover with plastic wrap and let rise for 30 minutes.

    TIP: In the interest of saving dishes, you can use the same bowl — just be sure to remove all of the dough, or your dough ball will cling to those bits.

  • Coarsely chop roasted garlic and on a floured surface, knead garlic into the ball of dough. Flour your hands and form into a ball, covering in fine layer of flour. Place back into oiled bowl, cover with plastic wrap and let rise for another 30 minutes.

  • Flour your hands, then gently form into a ball or oval, depending on what shape you’d like the bread to take. Transfer to a floured pan or baking stone, then slice a few slashes. Bake for 35 minutes, allow bread to cool for several minutes, and serve while warm!
